What is ranchero sauce made of?

Ranchero sauce (salsa ranchera) is a spicy tomato-based sauce made with onion and peppers. The sauce is cooked in a skillet to blend the flavors, and it’s typically served warm or at room temperature.

This homemade salsa pairs well with tortilla chips or Tex-Mex dishes like huevos rancheros. Its bright, citrusy flavor doesn’t overpower breakfast dishes but adds a hint of spice.

Is ranchero sauce spicy to eat?

Ranchero sauce tends to have a moderate spice level compared to other salsas, but the level of spice is controlled by your choice of peppers.

I typically use 1-2 serrano peppers, but you can reduce the amount of pepper or substitute jalapeños for a milder sauce. Jalapeño peppers tend to be larger than serranos, so one pepper should be adequate if substituting.

What type of tomatoes should you use for ranchero sauce?

Beefsteak tomatoes or salad tomatoes work best for traditional ranchero sauce. Avoid using Roma tomatoes, which have thick skins and a sweeter flavor.

I like choosing firm, round tomatoes that have a concentrated flavor. Some vine-ripe tomatoes have a watery consistency that can make your salsa less flavorful.

Is ranchero sauce the same as enchilada sauce?

Ranchero sauce has a brighter flavor compared to enchilada sauce since it doesn’t contain chili powder or chicken broth. It also has more texture than enchilada sauce when prepared with hand-cut vegetables.

Since this salsa recipe tends to accompany breakfast dishes (especially over-easy eggs), we opt not to add garlic or other strong spices like cumin or paprika.

Tips for Making Ranchero Sauce


  • USE GREEN ONIONS – If you don’t have green onions available, you can substitute yellow onion or white onion. The green onions give a different taste and more visual variety to balance the sauce.
  • SAUTE IN A CAST-IRON SKILLET – While not necessary, the cast-iron skillet gives the ranchero sauce a slightly smoky flavor that tastes delicious. Let it simmer long enough for the flavors to blend well.
  • CUT THE VEGGIES BY HAND – To save time, you can use an immersion blender or food processor, but traditional ranchero sauce has more texture.

How to Serve Salsa Ranchera

We love enjoying ranchero sauce with over-easy eggs for huevos rancheros, but you can add this salsa ranchera to any of your favorite Mexican dishes like tacos or burritos.

We sometimes add chicken broth as a variation of this recipe to pour over taquitos as well.

Garnish your salsa with avocado slices, fresh cilantro, or a squeeze of lime juice before serving, if desired.

Storage for ranchero sauce

You can make this easy ranchero sauce in advance and store it in the refrigerator in an airtight container or glass jar for 3-5 days.

It also freezes well for up to 3-4 months. Defrost it in the microwave or let it thaw in the fridge overnight before use.

Ingredients
 

  • ¼ cup green onions (about 3 stems)
  • 1-2 serrano peppers (stems removed, diced, and deseeded)
  • 1 large beefsteak tomato, diced (may use vine-ripe or salad tomato)
  • 1 tablespoon vegetable oil (may substitute olive oil or avocado oil)
  • ¼ cup water
  • ¼ teaspoon salt (to taste)

Instructions
 

  • Trim off part of the green onion stems and slice the remaining onions into small circles.
  • After removing the stems, cut the serrano peppers lengthwise. Then deseed and dice the peppers.
  • Heat the cooking oil in a skillet and saute the onion and peppers over medium-high heat until tender (about 1-2 minutes).
  • Add tomatoes and just enough water to create a sauce (about ¼ cup). Add salt to taste (about ¼ tsp), and simmer for 2-3 minutes until tomatoes become tender. Crush the tomatoes into the mixture with a spoon to blend well.
  • Remove the sauce from the heat and serve with tortilla chips, eggs, or your favorite Mexican dish.

Notes

  • You can substitute diced yellow onion or white onion for the green onion.
  • Use two small serrano peppers or one large serrano pepper, depending on your desired spice level. You can also use jalapeño pepper for a milder sauce.
  • Avoid using Roma tomatoes, as these have a thicker skin and tend to have a sweeter flavor.
